This exceptional Demeter olive oil is produced by ten olive growers in Tunisia, around 270 kilometres south of Tunis. Environmental protection as well as the protection of human health have always been important for the people in this region. The farmers initially used organic farming methods but, in 2001, they converted to biodynamic cultivation. Since the 2003 harvest, the olive farmers of Zayatine are a recognised Demeter partner.

An important factor in biodynamic farming in this dry area on the edge of the desert is the use of compost made out of tree cuttings and sheep manure which is treated with biodynamic preparations. Experience on the Sekem farm in Egypt which has, in similar climate conditions, been using biodynamic farming methods for already 25 years, has shown that this improves soil conditions, particularly with regards to the water content. Even though the Tunisian olive growers are still in their early days with biodynamic farming methods, they are, nevertheless, growing olives of a very special quality, already today.
